We embraced this fragrance of spices and ocean of smells at a very pleasurable surrounding, at Ana’s home, and cooked back to back with Rodrigo. He – our inspiration, us -his protégé, together – we shared an extraordinary experience. It was truly amazing! Rodrigo prepared the signature red spice mound that delivers magic to most Ethiopian stews, berbere. In fact, Rodrigo enjoys preparing blend of spices so much that he became our spice wizard.
The flavour of this cuisine is on another level! Just like the memory of your first kiss, the first taste of injera will leave you with the resembling staple and an experience you will never forget. It is spread out like a large, thin pancake and it is the base of almost every meal on an Ethiopian table. Dinner scoops of all the dishes that were plated, folded in injera bread, sampling each separate savor told through an orient of warm flavours. Degustating it with your hands makes it even more rich and perfect.
