We have been following Sandra, Iva and Kalina through their fashion blog Skopje Casual from its very beginning. It didn’t take long for us to invite them to a fun get-together and it didn’t take them long to happily agree on a mutual dinner.
For this Cuban – Skopje Casual issue, we took inspiration from Sandra’s trip to Cuba and came up with a three-part menu based around the classic flavor combinations of the Cuban cuisine. Throughout the preparations, we embraced the summer season and its unique array of qualities, innovative dishes and a respect for nature’s whims.
Even though we were seemingly light years away from the nearest beach, we decided to get in the beach mood with some striped t-shirts as a statement of our blog-founded friendship. Sometimes, finding joy in the smaller things – like preparing some good ol’ fashioned mojito cocktails, is where it all begins…
Freshly prepared Cuban style bread
Succulent chicken baked in peppers, onions, lemon and orange juice and variety of spices
Watermelon, arugula and fresh sheep’s milk cheese salad drizzled with balsamic vinegar.
Cuban chicken with black beans rice (pollo cubano con arroz frijoles negros)
Chocolate pancakes topped with dark chocolate ganache, blackberries, almonds and mint.
