This is a really quick, elegant and delicious salad. To get some inspiration, we  made a trip to the nearest market to pick up the latest seasonal produce on offer. We came back with juicy oranges, fresh mozzarella, arugula and prosciutto.

This quick fresh salad contains the 5 key essentials to success. A good base, a key flavour, some form of crunch, some form of protein to fill you up, and obviously some sort of visual appeal to make you want to eat it all up.

For 4 portions 

Mozzarella 4 medium size pieces
Orange 2 medium size pieces
Arugula  2 springs
Grana Padano   100 g
Prosciutto   200 g
Extra virgin olive oil
Pepper and sea salt


Lets start with making the dressing for the salad. Squeeze the lemon juice into a clean jam jar. Add three times the amount of extra virgin olive oil, season with salt and pepper, then screw the lid on and shake to emulsify. Leave it aside and slice the oranges on equal circles. Now let us begin assembling the salad . First add a slice of orange, then tear up the mozzarella (never slice it!) and place it near the orange. Roll couple of leaves of arugula  in stripes of Prosciutto until you waste all of the supplies and place three of each roll on every plate. Finish the salad with the previously prepared dressing, pepper seeds and a fair amount Grana Padano stripes.
